Food Safety and HACCP Policy Template

Establishes food handling, storage, preparation, and temperature monitoring procedures in compliance with Food Standards Australia New Zealand (FSANZ) and HACCP principles, beyond the Nutrition Policy.

Food Safety and HACCP Policy Template

Protect residents from food-borne illness with a structured Food Safety and HACCP policy covering all aspects of food handling, storage, preparation, and service in your facility.

Overview

Aged care residents are among the most vulnerable populations to food-borne illness. While a Nutrition and Hydration Policy governs dietary care and nutritional outcomes, it does not address the food safety and hygiene obligations that govern how food is handled, stored, and prepared. This Food Safety and HACCP Policy template establishes a Hazard Analysis Critical Control Points (HACCP) framework for the facility kitchen, covering all regulatory obligations under Food Standards Australia New Zealand (FSANZ) Standard 3.2.1.

What This Policy Covers

  • HACCP principles and critical control points for aged care food preparation
  • Temperature monitoring and recording requirements (cooking, cooling, storage)
  • Food allergen identification, labelling, and communication
  • Texture-modified food handling (IDDSI compliance)
  • Personal hygiene requirements for food handlers
  • Food storage and stock rotation procedures
  • Cleaning and sanitising schedules for food preparation areas
  • Pest control obligations
  • Food recall procedures
  • Staff food safety training requirements

Compliance Alignment

  • Food Standards Australia New Zealand (FSANZ) Standard 3.2.1 – Food Safety Programs
  • FSANZ Standard 3.2.2 – Food Safety Practices and General Requirements
  • Aged Care Quality Standard 3 – Clinical Care (nutrition and hydration)
  • IDDSI Framework (texture-modified food)
  • State/territory food safety legislation

Why This Policy Matters

A food-borne illness outbreak in an aged care facility can result in hospitalisations, deaths, and significant regulatory and reputational consequences. Facilities without a documented food safety program are non-compliant with FSANZ Standard 3.2.1 — a separate legal obligation from aged care accreditation. This policy ensures the facility meets both frameworks simultaneously.
